Using a handheld masher, mash the potato pulp until smooth.

  1. Preheat oven 350
  2. Wrap potatoes in aluminum foil
  3. Cook potatoes for about 1 hour to an hour & 1/2, until fully cooked. Poke fork into potatoe to make sure soft.
  4. Let potatoes cool for about 15 minutes, unwrapped out of foil. Cut potatoes in half.
  5. Once cooled, spoon out potatoe but leaving skins in tacked.
  6. If potatoes are still too hot to handle, just let them cool down until you can handle them.
  7. Put all potatoes in bowl.
  8. Cut up 3 stalks of scallion, using the whole scallion and cut up small white onion to your liking. Add both to bowl.
  9. Add other ingredients to potatoes but only add the milk if needed. You don't want to make the pototoes watery.
  10. Mix all ingredients together, but don't smooth out like a mash potatoe. Make sure you taste the potatoe incase you need to add additional salt or seasonings.
  11. Then scoop potatoe back into their skins and bake until brown but don't overcook. You just want cheese basically to melt. I would cook about 20 minutes. Depends how crispy you want them. You can even top them with ranch dressing or sour cream.
  12. Serve as a side dish with your meal or with your favorite soup & salad. Enjoy!

Anyways, as usual, I decided to make my own variation. These were born from the simple fact that I am on a cream cheese kick lately, wraps with cream cheese, crackers with cream cheese, cream cheese on top of cream. The great thing about twice baked potatoes is, precise measurements really aren't necessary. Basically, what you do is you bake some potatoes, scrape out the insides, then add a bunch of yummy stuff and mix it together. Then you fill the scraped-out potato shells with the new potato mixture, top with cheese, and bake again, just to warm it up.
