  2. Make ready 3 sausages
  3. Prepare 1 bunch or less dania
  4. Prepare 1 leaf spinach
  5. Get Half capsicum

  7. Make ready 3 tbspn olive oil
  8. Prepare Spices
  9. Prepare 1 piece Green onion(leafy)

In a large bowl, combine the flour, baking powder and salt. Use an ice cream scooper to pick up mixture and drop on an oiled grill or iron skillet. Potato pancakes are such a delicious way to use up leftover mashed potatoes. They have fluffy centers, golden edges, and a little cheese for extra flavor.

Steps to make Potato pancake:
  1. Peel potatoes, wash and bring to boil with salt. When ready drain all the water and mash.
  2. Cut the onion, spinach, dania and capsicum and shallow fry for 2min with the spices, add in sausage(remove the outer cover and mash then add in)
  3. Remove from heat and mix well with the mashed potatoes.
  4. Take a small amount of the mash and mold in your palm then shallow fry on the pan on both sides until they appear golden brown.

They're great as a side dish instead of mashed potatoes or baked potatoes - but I also love them for breakfast instead of making hash browns. Fry until golden brown and set, then flip and fry until browned on the other side. Remove pancakes to a paper towel-lined cookie sheet,and keep warm until all pancakes are done.
