  1. Take the curd into a bowl & add maida accordingly to make a thick but runny mixture.
  2. Add 2 eggs and mix homogeneously. Add 3-4 tablespoons of maida accordingly to keep the mixture thick.
  3. Now you can add the baking powder & optionally the cornflour. Corn flour will help bind the mixture well but is optional if you don't have it.
  4. Now add the salt & sugar in powder form. If you can't make the sugar powder then you can put the sugar directly as well. But in that case, you have to mix for a longer time & make sure the sugar is dissolved well into the mixture.
  5. Time to mix the ingredients very well preferably with a whisk. You can also use a spoon in case you don't have a whisk. Make sure to mix homogeneously & make thick but runny paste little thicker than a dosa paste.
  6. Keep the mixture aside for 10-15 mins.
  7. Heat a pan very well & pour half a cup(coffee cup) of the mixture into the pan in the center. Then make sure to close it with a lid.
  8. Let it cook for around 2 mins or less & check if the pancake has risen enough & the bottom side should turn brown. It will look something like this.
  9. Note: Please do not overcook it otherwise it will burn & it won't be tasty. Make sure to check that it is not burning & smoking.
  10. Take it out from the pan once it is brown. And paste both sides of the pancake with a tablespoon of butter. Now serve it hot. It should be delicious.
