  2. Place the oil in a pot, finely chop your onions into it and sauté well, then add the spinach and let it until it is tender.
  3. Then add the water, the stock cube, the salt and the finely chopped dill and boil for 15 minutes.
  4. Follow by adding the rice, you might need to add a little extra water, stir and let it boil well stirring from time to time.
  5. As soon as it is done, place it in a baking tray, trying to keep it from having too much liquid, let it for a while so that you can beat the eggs and add them on top.
  6. Break the feta cheese into pieces with your hands and spread it over the eggs.
  7. Place in a preheated oven for 20 minutes.

My mom would make it once a week, all winter long. She would usually accompany it with a small cheese pie (tiropitaki) or one or two Greek meatballs, and while you may think that as children we would hate it because of the spinach, it actually was a comfort food. In Greece spanakorizo is a main dish not a side - all the better to enjoy more of this healthy delicious dish! fresh dill is essential to the recipe however - so much better than dried.
