Take 4 eggs
Make ready 2 tbsp milk
Prepare 1/3 cup grated cheese

In a mixing bowl, whisk - together eggs, milk, and cheese. Stir in the salt and pepper. Set aside.
Heat olive oil in an non stick pan. proof, on medium heat. Add the onions and sauté until translucent, about 4-5 minutes. Add the garlic and tomatoes (if using) and cook a minute more.
Add the chopped spinach, a handful at a time, mix with the onions. Do not overcook the the Spinach. Add salt and mix well.
Add the egg mixture, spread the mixture out evenly on bottom of the pan. Spread the egg completely and add a little more cheese to top and mix a little.
Simmer the flame on low and cook till done and then flip and turn and immediately serve hot.
